Pata Airaudi
Pata Airaudi and her husband David Airaudi, began gravitating towards rosés and sparklings around 2010 -ish. As we did, we found very few brands that reflected our tastes - in wine or in culture. We hang out with a lot of artists (musicians, visuals), our crew is black, white, LatinX, Asian, queer, entrepreneurs, professional artist and all that was provided was dated faux/French aristocracy. We wanted quality wine that represented us; equally elegant for a date night toast and backyard bbq in our home of Venice Beach, CA. So we established our winery in Napa, apprenticed in Italy, studied in France and headed to the coastal vineyards of Mendocino and Sonoma to source our varietals.
Most sparkling wines try to be Champagne, but that cannot be replicated as Champagnes come from unique soil, climate and practice - the results are imitations manufactured in taste and spirit. We borrow from the old world traditions, but update them for modern California. We forgo the breadcrumby and headiness in favor of soft fruit and light toast while striving for Champagne minerality and mouthfeel. Bubbles are all we do; world class fruit, focus on craft, we keep our footprint small from cantina to shelf - biodynamic, sustainable practices and always vegan. We remain true to the ethos of Sapere Aude " Dare to Know" and welcome everyone to "Come as you are. There's always a seat at our table"
